Ever wonder what to feed houseguests?
I love having people come to stay with us, but I don’t want to spend all my time cooking while they’re here. I want to visit fun places or simply sit around catching up and playing games. That’s where meal planning and easy make-ahead meals become so useful. I’m always looking for yummy meals with easy prep time. I enjoy working in the kitchen with friends and there is always good conversation that comes from this time; I just don’t want to spend hours making meals when I have guests.
3 Easy Meals to Feed Houseguests:
1. Gluten- & Dairy-Free Bean and Taco Meat Enchiladas:
I made this the night before some houseguests came to visit, so it could sit in the refrigerator and soak up more flavor before I cooked it for dinner. And bonus, we had tacos the night before, so I got two meals out of cooking taco meat! We served this with fresh salsa, chips, and a salad.
- Saute ground beef and diced onions, drain and add taco seasoning and water according to seasoning packet. In a large baking dish, pour 1/2 cup of enchilada sauce in the bottom of the dish. Scoop beans and meat into tortilla, wrap, and place in dish, seam side down. Continue making all enchiladas until dish is full. Pour 1/2 cup enchilada sauce over the top of the enchiladas. Bake at 350-degrees for 35 minutes or until heated through. Let stand for 5 minutes. Garnish with green onions.
2. Frittatas:
Another quick meal to prepare, this time from The Pioneer Woman. You can’t make this ahead but you can throw it into a pan pretty quickly and have a yummy, healthy meal in no time. We have fresh fruit on the side.
I went straight to the expert for this one and used Martha Stewart’s recipe! This is another meal you can make the night before or in the morning while you’re making coffee. Make it gluten-free by using gluten-free bread. Let it sit in the refrigerator, absorbing all those delicious flavors for an even better-tasting dinner. On the side, we serve sausage and fresh fruit.
